Bless !! Mussels With Winsor Cheshire Dry Cider for two We like to use local produce where possible & we are obviously partial to Cornish seafood. We have found mussels from Menai which are lovely & sweet and can be sourced in local fishmongers in Chester Hoole when available. Heat a large, lidded saucepan and add a good glug of olive oil. Add 2 chapped shallots and one crushed garlic clove cook for one minute. Add 1kg of cleaned Menai (or Cornish) Mussels and pour in the Winsors Dry Cider. Shake the pan to mix and turn up the heat and put the lid on. Continue to Cook shaking the pan every now and again until all the mussels have opened and are cooked. Remove any mussels that remain closed. Spoon into serving bowls with the juices and sprinkle with finely chopped parsley. We like the curly English variety for this dish it tends to be more fragrant & vibrant green in colour. Serve with warmed rustic bread and a Chilled glass of Winsors Cider. Why not try adding pancetta with the garlic & a splash of cream before serving !!
